Pecan pie

I baked pecan pie today. This was for work. In 10 days I’ll take a whole day to bake more pies for Thanksgiving. If you need recipes check elsewhere on the blog.

It’s time again for … Pie!

It’s that time again. Thanksgiving (USA) is just around the corner. Alas, a few tries at getting aan online recipe book have all failed to one degree or another, but I still have the recipes posted in a blog posting.

Making bread is easier than one thinks

I made some more bread today. I kept forgetting about the dough rising. And dang if it ain’t some of the best bread I’ve made!

Making bread is really simpler than we think. Some complain that making sourdough bread is harder, partly because the rise time is so much longer than with baker’s yeast. [...]

Freezing Sourdough

Well, it worked spectacularly well!

This week, I made too much starter. In anticaption of baking, I built up the sourdough. (I had somehow neglected to save any the last time I baked, so I had no storage starter in the fridge. So, I had to start it up again from dry. I now keep [...]

Sourdough Recovery

The sourdough starter is fully revived and strong now. Perfectly done.

I took the dry starter I had prepared a month or so ago. I took a heaping teaspoon of the dry flakes and soaked them in a couple of tablespoons of tepid water until it was fully dissolved. Then I fed it 1/4 [...]

Sourdough Disaster

It was always a risk, but we’ve avoided it. Until today.

See, I find that the sourdough proofs really well in the oven with the light on. The light keeps the oven warm, but not too hot, and the sourdough really likes it.

But it’s the oven.

And ovens are used for more than [...]

BlendTec Mixer – First Impressions

Our BlendTec (formerly K-Tec) mixer arrived 2 days ago. Model: Mix & Blend II. We had a good time unpacking it and exploring it. Having seen the BlendTec “Will It Blend?” videos on YouTube, Ben (9) really really really wants to “make snow.”

Very first impressions

Upon unpacking and exploring, here’s what we observed.

Half-half loaf very soft

Since I got my Vita-Mix back 2 days ago, I was able to grind some wheat. Yea! I’m still maintaining the starter on white flour since I ran out of rye berries. The quickest bread recipe I use calls for 2 cups of starter. Well, that makes the bread roughly 50/50 white/wheat if I [...]

Dry starter revived successfully

Well, my dry starter has revived successfully!

Recall that I took some of my storage starter (from www.carlsfriends.org) and revived it last week. I then took part of the fresh starter and dried it. Once it was dry and ready for the freezer, I took some to test it to be sure it would [...]

Drying My Starter

The starter is doing great. I didn’t discard any tonight so that we’ll have enough for some Sourdough Pancakes in the morning.

While I have the white starter in such good shape, and just now fed, I’m going to try my hand at dyring and freezing some. Well, drying tonight. Found instructions by Carl, [...]
