Eggs

Greg also mentioned eggs today. Like Dr. D.C. Jarvis said in his book, Folk Medicine, egg is pretty much a complete food. Jarvis said everyone ought to eat one whole egg each day. Greg likes the simple amino acids contain in eggs. We have a hard time getting enough of that in our diets, and eggs are a good source of very assimilatable aminos. He further likes the Omega-3 enhanced eggs, since we also have a hard time getting enough of the essential fatty acids in our diets, unless we’re fish-eating familes who have salmon 4 times a week. Kids in particular are seen as being deficient in these essential fatty acids, so using using the Omega-3 enhanced eggs is a decent solution.

    FWIW, the medical community keeps going back and forth on whether eggs are good for you or not. IMO, their indecisiveness negates their input for now. OK, that sounds fringe, doesn’t it. Oh, well.

    I think of eggs as “Liquid Bird” :) Whether the medical community loves them (and all their simple aminos), or hates them (cholesterol causing yolks), they are just dang yummy! I say “eat eggs if they make you happy”, as far as whether they make you healthy or not they sure do beat a plate of bacon :) (pass the bacon to me please—Mmmm Bacon…)
